Plain Greek yoghurt Peanut butter Pancakes
Ok ok, you may be freaking out now when you see the two ‘P’ words pancakes and peanut butter in the same title. But CALM down. Firstly, these are healthy pancakes and secondly peanut butter is healthy… ONLY if you buy the natural. There is no need to buy a peanut butter with added sugar or salt because it taste great without anyway. Peanut butter contains a lot of healthy fats such as monounsaturated and polyunsaturated omega-3 essential fatty acids, as well as loads of other nutrients.
(Obviously how big your pan is will determine how many pancakes you will get. This recipe makes 6 and are about 1cm thick so they are 10cm diameter.)
100g Greek Yoghurt
2 egg whites
30g peanut butter
1tsp baking powder
Add all the ingredients in a blender and blend, then pour into the pan.
Flip the pancake after about 1min on ech sde (it should be golden)
Tip “to know when you can flipp it, wait until you see bigger holes or bubbles further in on the pancake”
Add what ever toppings you’ll like. If you don’t want to add extra calories, may I suggest ‘Sugar Free Jelly’. You can just sprinkle the powder between each pancake… This will also make the pancakes stick together. Plus this will make it taste almost like Peanut butter jelly sandwich, but without the sugar.
